Oil Free Roast Potatoes

- 500G Maris Piper Potatoes

- Bunch Fresh Rosemary & Thyme 

- Sea Salt


Preheat oven to 220c ( 200c fan assisted oven ) and prepare large flat oven proof dish with greaseproof paper.

Begin by ensuring your Maris piper potatoes are thoroughly washed. Cut potatoes into halves or quarters, making all similar sizing.

Place potatoes into a large saucepan, fill with cold water and  bring to the boil. Cook potatoes thoroughly and completely soft, check this by being able to place fork straight through potatoes easily. 

Drain potatoes using colander, and place back into sauce pan. Cover with lid and begin to shake vigourously, creating fluffy potatoes.

Spread potatoes evenly on the prepared oven dish and sprinkle rosemary and thyme over potatoes, placing into preheated oven.

Bake for 40-45 minutes or until golden brown, turning potatoes half way through. The potatoes are done once they are evenly brown and crispy. Take out of oven and enjoy.
