Gingerbread Baked porridge Cake

Gingerbread flavoured porridge? YES. But baked as well? DOUBLE YES. This gingerbread baked porridge cake is perfect for when you want something more than just porridge but still want to be healthy.



- 200g oats ( Rolled Oats are best)

- 300ml Almond Milk

- 50g Raisins

- 50g dates 

- 2 tablespoon flax seeds

- 1 tablespoon cinnamon

- 1 Tablespoon black strap molasses

- 1 teaspoon ginger

- 1/4  teaspoon nutmeg

- ¼ teaspoon vanilla

- ¼ teaspoon cloves


- Preheat oven to 200* or 180*c fan oven

- Mix all ingredients together in a large mixing bowl and give a thorough mix so that everything is evenly mixed together. Empty mixture into bake proof dish and place into preheated oven. Cook for 30-40 minutes, or until oats have completely soaked up all liquid and gone slightly light golden brown. Remove from oven and top with maple syrup and even a gingerbread man for extra festiveness!
